We just completed the racking of the entire 2014 vintage, over 5,000 gallons of wine!

Racking is important for naturally removing the sediment from the wines.

It is also an opportunity to test, visually inspect, and smell the wines to make sure everything is on track.

Getting the wine out of the barrel for a few minutes also refreshes the wines. The aromas when we are putting the wine back in the barrels are so much more intense than when we are removing the wine to tanks.

When we remove the wine, the sediment is left behind and we wash the barrels out with a barrel wand using hot water. Having a tankless water heater is a must for this step! When the water runs clear, we know the barrel is clean and ready to have the wine returned.

Also, about 2/3 of the 2015 red wines have completed malolactic fermentation which improves the mouth feel and wine smoothness.
