Not a lot going on in the winery right now as the vineyard has taken most of our attention getting ready for the 2016 growing season.

We have completed our spring cleaning and getting ready for the second racking of the 2015 wines.

The 2015 reds have not yet completed malolactic fermentation. This process is also called secondary fermentation and it converts the tart acid (malic) into smooth acid (lactic) so we will be bringing groups of barrels into the out room to warm up a bit.

Our barrel room is kept at 58 degrees and this is too cold for secondary fermentation to occur so we like to bring the temperature up to around 65. This is a safe temperature for the wine but still allows it to do its thing!

As soon as the fermentation is completed, back in the barrel room they go for the next few years.
