One of the routine tasks this time of year in the winery is to check the air pressure level of the stainless steel tank lids every two days. Because of the winter weather, the winery is below the normal 58 degrees that we maintain throughout the rest of the year. These colder temperatures cause the air inside the diaphragms to contract which could cause a faulty seal and let air in – not good! It is critical to keep our eyes on everything!

We will soon be bottling our 2014 barrel fermented and aged Viognier and will be starting cold stabilization of the 2015 Sky Island Viognier to get it ready for bottling. Labels are in production for the 2013 “The Signature” Petite Sirah and that wine will be labeled and ready for release in March!
